Liver, heart and kidney from pasture-fed beef are, like all offal, a real superfood. Predators eat the innards of their prey first because they instinctively know that this is how they are provided with the widest range of the most important nutrients.

It used to be no different for humans. In traditional cultures, offal is valued the most, not muscle meat. This was also the case here in Europe not so long ago.
