Carrageen (Chondrus crispus, aka Irish Moss and Carragheen - from Irish carraigín 'little rock' ), harvested by hand along the beautiful coasts of Ireland.
Using Carrageen (Irish Moss)
Irish moss is great as a thickener for stocks, broths, soups, desserts, milk products, ice cream, puddings, etc. It's basically a vegetarian/vegan alternative to gelatine. Boil some algae (a popular folk remedy calls for ca. 7g per 500ml) and let the algae extrude its gel. This gel will thicken the liquid.
